mittelgroße Pfanne * *

Stabmixer *

150 g Mehl *
20 g Zucker *
1 Pck. Vanillezucker *
250 ml Milch
3 Eier
1 Prise Salz
25 g Butter
etwas Puderzucker – ca. 20 g
Optional20 g Mandelstifte * – oder Rosinen, je nach Geschmack
Vanillesoße * – oder Fruchtsoße, je nach Geschmack

Eier trennen und Eigelbe in eine große Schüssel geben. Eiweiß in einen hohen Rührbecher geben.

Zucker, Vanillezucker, Salz und Milch hinzugeben. Mehl hinzusieben, damit keine Klümpchen entstehen. Den Teig kurz quellen lassen.

Währenddessen Eiweiß steif schlagen und im Anschluss nach und nach vorsichtig unter den Teig geben.

Die Hälfte der Butter in eine beschichtete Pfanne geben. Auf hoher Hitze zum Brutzeln bringen. Die Hälfte des Kaiserschmarrn Teigs hineingeben und bei mittlerer Hitze goldbraun backen. Wenden und auf der anderen Seite ebenfalls goldbraun backen. Danach den gebackenen Teig mit einem Pfannenwender in kleine Stücke trennen.

Falls der Teig noch nicht ganz durch ist, einfach noch kurz von allen Seiten weiter anbraten. Mit der restlichen Butter und dem restlichen Teig macht ihr noch einmal genau das Gleiche.

Zum Servieren je nach Geschmack noch Puderzucker und Mandelsplitter oder Rosinen über den Kaiserschmarrn geben. Lecker schmeckt auch Vanillesoße oder Fruchtsoße dazu.
